Dear Crunchy Tacos –
I am addicted to you. There I got that off my chest. I love the crisp texture of your hard shell, the fun toppings that can be put on you and the flavorful salsas that dance on top. I guess it could be worse, I could be addicted to cheeseburgers 🙂
When I make you, my dear tacos I like to use a combination of the following ingredients:
- Rotisserie Chicken (preferably garlic)
- Red Leaf Lettuce
- Spicy Taco sauce
- Fresh Tomato Salsa
- Extra Extra EXTRA sharp cheddar
- Fresh Jalapeno
- Pinto Beans
Recently I purchased Tostada Shells… I know, I know PLEASE hear me out. I used to LOVE tostada’s when I was younger. I had a flash back of nostalgia as I threw them into my shopping cart (I tend to be rough on my groceries 🙂 ).
They have been in my pantry for about two weeks now and finally I broke down and had to have them. I felt as though I was betraying you, my dear taco shells, but knew the expansion into other shell territory would be good for my
mental health 🙂

I have started on my 2011 Goals!
I brought my friend, Elizabeth to the airport this afternoon for her 2:30pm flight (boo I hate when friends leave). She came to my house this past Monday for a visit. Elizabeth is in Law School and is starting her final semester on Monday. She will study for the bar from May ’til July. I am glad that she was able to visit because it might be a while before I see her again 😦
supposed to go to Savannah and Charleston this week…however I fell on ice, Christmas weekend and sprained my wrist, chest and neck (yes I live in North Carolina). She was a good sport and came anyways and we took the time this week to visit some local historical areas.
On Wednesday we visited Latta Plantation located in Huntersville, NC. We had a great tour guide who made the excursion funny in addition to being educational. The coolest part of the visit was seeing the outdoor kitchen. I can’t imagine doing ALL of my cooking over fire. There is even a lady that demonstrates making a cake in a fire! Can you imagine??
Have you ever done any extreme cooking like this?
On Thursday we went to the Duke Mansion located in Charlotte, NC in the Meyers Park Neighborhood. WOW what a gorgeous house. This 34,000 sq ft mansion is now a hotel/meeting place. The history and the grounds were stunning.
The gorgeous picture above is of a fountain that is on the grounds. I would love the opportunity to stay at the mansion. If you are ever visiting Charlotte, NC I highly recommend staying there. The staff and the mansion are amazing.
After dropping Elizabeth off at the airport I went to Trader Joes to get some groceries that would be a great platform for my 2011 goal of eating one clean meal a day.
For dinner tonight I made: Chicken Sausage Ravioli with Vodka Sauce, Brussels Sprouts and Rotisserie Chicken. I wanted to get in a good dose of protein. The rest of the night I am going to spend about an hour at the gym and then watch some movies 🙂

I am not a fan of eggplant, plain and simple. I know it’s in my header photo, roasting away on the grill. I just like the picture of it cooking – I didn’t even eat it once it came off the grill. I don’t even think that my dog ate it 🙂
I had two of these purple little monsters in my fridge from this past Tuesday’s CSA pickup. I decided that I needed to conquer them, I needed to make them work. Derado’s Market in Cornelius, NC has the most fabulous eggplant – yes I said fabulous and eggplant in the same sentence. They slice it very thin and the beading is magnificent and it is pan-fried to perfection. I figured why not? I can slice things thin and bread them with the best of them.
So I began slicing, and prepped 2 pie dishes for the egg and the bread dipping process:
And then it was time to soak those suckers…
Time to cook!
The eggplant needed some sauce:
- One Jar of Canned Tomatoes mashed up
- 2 cloves of garlic
- Sicilian spice mix
- fresh local parsley
- 2 tbsp EVOO
I also made some turkey meatballs (the pictures of that process did not look appetizing!) and boiled some wheat egg noodles.

Tuesday night..yes I said Tuesday night (sorry so behind on blogging!) I made THE most EPIC pizza in history of mankind. I know what you are thinking, that is a huge statement to make.
- Homemade Pizza Crust
- Roma Tomatoes (local)
- Provolone Cheese 3 Thin Slices
- Jack and Cheddar Cheese 1 Cup
- Pinch of Sea Salt
- Pinch of Black Pepper
- Sicilian Spice Mix
- Homemade Pizza Sauce (stewed tomatoes, 2 garlic cloves, EVOO and sea salt/pepper)
- Basil (local)
- Parsley (local)
I believe that the secret when using local flavorful tomatoes in any recipe is sea salt. The sea salt flushes the flavor out of the tomato and seems to work better than regular table salt.

I am often very thankful for my life, yesterday was no exception to that. I spent the morning working on my blog and catching up on emails and the afternoon was spent out on Lake Norman. Lake Norman is a beautiful lake and is considered the “area” north of Charlotte from Huntersville to Troutman.
I had a great time on my friend Chae and Seth’s boat. Christine was there to and we had a big discussion about what her hobby should be. She is the one that has been in previous posts and recently got married. I talked her into trying out blogging! Her new blog is called “Beyond the Ring“ and is going to be about finding her way after getting married. There is so much hype and planning that goes into the wedding it seems that brides are often left with the question “What do I do now?” Christine is going to be blogging about this and about other adventures as a newlywed. I hope her blog becomes famous, so make sure and check her out!
When I got home last night my head was spinning with dinner ideas. I have a TON of produce to use up from last week’s CSA pickup… so I knew that had to be involved. I ended up deciding on chicken kielbasa, corn on the cob (local) and a sweet potato (local).
It was such a great dinner, I am going to repeat it tonight 🙂 Plus my brother is out of town all week so I am cooking for one.
This morning I was running VERY late to work and did not have time to make breakfast. I am real nervous eating eggs right now unless I know where they come from. I only purchase eggs from local farmers, but know that restaurants and the cafe at work does not do the same. I am also stopping my dairy intake becuase it is doing a number on my skin and females with PCOS should really limit their dairy intake. I typically would get cottage cheese or a parfait… but as I was looking around at what to get I thought about otameal. They have a big ole’ pot of oatmeal that was just asking to be doctored up. I got myself a container, a banana, a packet of peanut butter, a packet of honey and some granola. Waaalaaa:
Why haven’t I thought of this sooner? Face palm! It was so great, I think this may be my new staple when I am running late and need to eat at the cafe.What do you do when you need to eat breakfast in a pinch? Do you fast food it? Skip it?

I often blame my weiner dog (Miss Darla Marla) for stealing my money…
With a face like that how could I do such a thing? I am laughing to myself right now because she was litteraly carying a $20.00 bill in her mouth while running to her bed. Maybe I have been right all along?
Anyways I did HORRIBLE today with my eating. I had a yougart parfait from Panera Bread this morning, 2 mugs o’coffee, a scoop of ice cream and a piece of cake..cringe! I cannot keep this up. I am really going to re-focus my food intake the next few days…talk about pathetic. But that’s ok we can’t always be perfect right?
I have a big weekend planned, which I am super excited for. Tonight I am going to take it easy, but tomorrow I am going to sit by the pool with friends and tomorrow night I am going to a Carolina Panthers game! I have only been to one other Carolina game in the 5+ years I lived here. Very excited for this opportunity. What is even more great than that is that I am going with my friend Kaytea and meeting up with my friends Arika and Hunter.
Do not think I have forgotten about my training plan. I am going to go for a long walk tonight with Miss Darla Marla and go to Zumba in the morning.
What am I going to do about dinner tonight? I know one thing I am going to do, eat something that contains some vegetables and something green! I think I am in desperate need of a Vega shake and may start with that…
I had something with some nutrients 🙂
I made Trader Joes Orange Chicken with some broccoli and brown rice….felt good to have some REAL FOOD in my system.

So much good food at last nights Taco Dinner party! Newlyweds Christine and Derek came over to see my new place as well as eat good food. They even brought over their lion, dog Sonoma. Their wedding was held in Harbor Springs, Michigan on the gorgeous Lake Michigan. I am so sad that I was unable to attend 😦 But here are some pictures of the gorgeous wedding:
Our Taco Buffet included: Ground Meat, Jazzed up Refried Beans, Shredded NYS Cheddar Cheese, Lettuce, Avocado, Roma Tomatoes (local), Sour Cream, 3 salsa’s /sauces, Black Beans and Pinto Beans. I left my camera at home but will update this post with pics after work.
After dinner we all hung out and watched Teen Mom with a lovely commentary from my brother.Where was the most beautiful wedding you attended? Have you ever been to a destination wedding?
It was a great time with good friends.
